Fresh Berries with Raw Cream and Almonds

Tasting Notes
This simple summer recipe is light, bright and sumptuous. The acidity of the berries pairs well with the heavy raw cream and the almonds.

- 1 handful Whole Almonds

- 1 cup Cow's Whipping Cream

- 1 cup Strawberry

- 1 cup Blueberries

Wash the Berries in a Colander 3 Minutes
Place the berries gently in a colander to prevent from bruising. Rinse thoroughly with running water and dry on a towel.

Slice the Strawberries 3 Minutes
Cut off the head of the strawberry. You can either core it out or just slice it off from the rest of the strawberry. Lay the strawberry on the cutting board and cut your slices to the desired width.

Option #1: whip the cream in a vitamix blender with adjustable speeds 5 Minutes
Chop up any flavoring you want to a add to the cream and add to the vitamix first. Then add the cream to the vitamix. If you plan to add any liquids, such as honey or vanilla extract, or seasoning, such as salt, add it to the cream in the vitamix. Turn the vitamix on low and slowly increase the speed no higher than a medium speed. it should only take 15-20 seconds to whip to the desired texture. Watch carefully to make sure you do not over whip the cream which will ruin the flavor and texture. An over whipped cream looks rough ragged and dried out. You can under whip the cream so it holds a little form but still resembles a liquid or you can whip it more firm until becomes stiff and still soft and smooth.

Create the Bowl 2 Minutes
Place the berries in the bowl, add the nuts, spoon 2 to three spoons of cream on top of the berries and nuts, squeeze some lime or lemon, add a pinch of salt and finish with a sprig of mint. The lime or lemon will add some brightness and the salt will bring out the flavors. Enjoy!
