Burger, Sweet Potato and Micro Greens
This is a flavorful and sumptuous bowl that you, your family and toddler will love. We are using a grass fed beef mixed with a little red onion and salt. It pairs really well with steamed sweet potatoes and the micro green salad.
Dice the Potato 10 Minutes
Wash the potato and lay on a cutting board. Choose a heavy knife and slice the sweet potato in half. Also slice off each end of the sweet potato. Slice each half into another half. By breaking down the potato into 4 pieces it will be easier to slice into planks. Lay each piece flat on the board and slice vertically into planks. Then stack the planks on top of each other and slice lengthwise into fries then crosswise into cubes. Video
Wash the Produce 3 Minutes
Place the produce together in a colander and wash with cold water. Let the water drain and dry the produce with a paper towel.
Make the Paddies 5 Minutes
Place the ground beef in a bowl and add any diced veggies, salt or anything else the recipe requires. With your hands work in any ingredients into the ground beef. Make sure to lightly mix the ground burger together until it is fully mixed to together. Be careful not over work the meat with your hands as you will take out the fat and dry out the burger and reduce the flavor of the meat. Form the patties into round balls which you will flatten with a spatula when you add to the pan.
Dice the Onions 5 Minutes
Peal the exterior of the onion until your left with the shiny flesh of the onion. Lay the onion on its side with the core facing outward. Holding the onion with your left hand, slice the onion in half with your right hand. Lay each side flat on the cutting board and slice in half through the core. Place each quarter on its side with the core facing horizontally. Using a claw grip hold the onion with your left hand and slice horizontally towards the core to make multiple different levels in the onion. Now slice vertically with the tip of the knife pointed toward the core to make multiple different columns. Finally cut down and perpendicular to the core to make the dices.
Steam the Potatoes 25 Minutes
Place a fat such as butter or oil in a deep pan or pot and turn on the heat to medium. Once the fat has melted add the diced onions and cover the pan. Check the onions after a few minutes. Once the onions have released their water add the potatoes and cover and steam for 20 minutes. Check every 5 minutes and move the potatoes from the bottom of the pan to the top. Check and try the potatoes until they are soft. Once they are finished move the potatoes off the heat and place in a bowl.
Sautee the Burger 8 Minutes
Choose a cast iron pan, if you have one, and place it over the stove on a medium high heat. Add the burger ball to the pan and flatten with a spatula and cover the pan with a grease screen. After about 5 minutes when the burger is browned on one side flip and re-flatten with your spatula. Add any cheese on the top of the burger and cook for a few more minutes. Remove from the pan and place the burgers on a plate to let it cool and finish cooking.
